After our introduction to Rubissow and a sampling of the Trompette (as seen in Part 1), a group of us hiked up to the South vineyard of Rubissow.  Tim Milos, wine maker at Rubissow, leads the discussion on viticulture and how they monitor the grapes and what factors ultimately guide them in their decision of when to harvest the grapes.
